This book had some decent recipes. The information section is very helpful to those new to the gluten-free path, and explains the alternative grains in detail.
With a bit of ingenuity, you can make many of the GF recepies vegan as well; I made the otmeal pecan cranberry cookies into vegan chocolate chip oatmeal with small substitutions. They were devoured~!
