What I liked most about this cookbook is that each recipe fits on a single page and most have a preceding page that explains testing done to develop it. They've taken the time to tweak ingredient proportions in multiple batches so we don't have to. There's just the right amount of chemistry and technical information to expand your understanding without losing interest. For example, the "foolproof" method of hard boiling eggs by bringing them to boil in cold water then allowing to cool does not yield the easiest to shell, apparently achieved by steaming for 13 minutes then shaking in a plastic container.
